Atlas's (Wild About Greens) newest vegan cookbook continues the popular trend of well-known cookbook authors sharing diet philosophies and recommending ways for readers to eat less meat and processed foods. After listing the ethical, environmental, and health benefits of a plant-based diet, the author shares shopping, pantry stocking, and meal-planning strategies, followed by recipes grouped in unconventional categories (e.g., plant-powered protein, bountiful bowls, Asian express). Much like the recipes in Mark Bittman's The VB6 Cookbook, Atlas's recipes-such as Asian-style tofu and vegetable soup, barbecue-flavored chickpea sandwiches, and mixed vegetable lasagna-include numerous variations and time-saving tips. They also include nutrition information and suggested accompaniments. VERDICT Atlas succeeds more as a recipe writer than a diet guru. Her new book may not compel readers to overhaul their lifestyles, but it will provide them with new, delicious, and practical vegan recipes. (c) Copyright 2014.
