Measurements appear in metric weights as well as volume measures, and each recipe includes a time line that will help significantly with budgeting time and effort. A whole illustrated discourse just on creating and cultivating a sourdough starter encourages the hesitant to add it to their repertoires. Home bakers will be eager to try Japanese milk bread or sky-high Nanterre bread, a brioche to astonish guests. Some may note a few omissions, such as Georgia's khachapuri, but other flatbreads from around the world stack up on the pages. Among the complex breads, a giant sticky bun impresses.
