Known for their umami flavors, mushrooms deepen the flavor of all manner of dishes while adding little fat, carbohydrates, or sugar, making them ideal to build taste satisfaction even in restricted diets. Plus, recent interest in foraging for wild foods has increased demand for mushroom varieties that were previously unknown to many. Chef Gentl began as a successful photographer before launching a culinary career, and a trip to northern Sweden introduced her to a broader array of mushrooms than she had ever known. Gentl advocates for cooking with mushrooms both starring on their own and as supplemental flavors for other dishes. Not limiting herself to the few varieties available in supermarkets, she offers recipes that feature rarer mushrooms like turkey tail, maitake, and lion's mane. Some of these recipes will appeal to beginning mushroom fanciers; others require not just uncommon mushrooms but other exotic ingredients such as preserved lemons.
