The cook charged with creating family meals that meet diabetics' particular dietary restrictions and yet gratify all nondiabetics at the table with fulfilling portions and plenty of flavors faces a daunting challenge indeed. This book aims to present not simply recipes but a comprehensive approach to meal preparation that begins with the weekly journey to a grocery store. Gassenheimer inventories a week's worth of ingredients and then designs meals around those items. She plans meals carefully, sometimes calling for extra food to be cooked early in the week and then reused in new guise later. For example, Monday night's dinner for four may be bronzed fish fillets, half of which reappear in Wednesday's fish-cake dinner. Dinners generally consist of a main dish and a vegetable or grain side dish. For the budget-conscious cook, she offers a price-per-person figure for every meal.
