Cooking for one can be frustrating. Most recipes yield quantities for four or more diners, and for the diabetic who lives alone, that fact raises several concerns. Either one has a lot of leftovers that become tiresome to eat repeatedly or one wastes a lot of good food. The diabetic also must deal with another problem: too much food on the stove tempts overeating, which could throw off blood-sugar levels and endanger health. Hughes has designed dozens of recipes that serve just one eater. She also avoids using too many processed items because of the danger they present in hidden sugars, carbohydrates, and salt. Cooks still must shop intelligently and also must accustom themselves to measurements in pinches. To appeal to contemporary tastes, Hughes' recipes reflect Asian, Mexican, and Italian flavors.
