The paleo diet, which favors lean protein, healthy fats, and loads of vegetables in lieu of grains, dairy, and added sugars, gets the Good Housekeeping triple-tested treatment. This is for both strict-diet followers and paleo-curious readers, with flexible options: a sprinkle of feta cheese here, a teaspoon of honey there. The 75-plus gathered recipes are mostly main dishes (coconut curry chicken; lamb-and-root-vegetable tagine; BBQ salmon and brussels bake) and sides (spiced ratatouille; smoky paprika grapes), along with a few soups (including pumpkin-and-sage) and giant salads (roasted pork with berries, to name one). Recipes for easy, homemade broths, keystones of the diet, precede the lot. Unsurprisingly, there are no desserts here, though several recipes and a special insert address the usefulness of caramelizing fruits and vegetables, to give them maximum flavor all on their own.
