Offering more than just recipes, registered dietitian and food writer Cavuto's debut is also a how-to guide for living well with diabetes. Similar to Jackie Newgent's The With or Without Meat Cookbook, Cavuto's work shares how to build meals around vegetables. The result is a cookbook that is flexitarian in nature, listing several superfoods (herbs and spices, fruits and vegetables) for everyday cooking. A lengthy introduction presents an accessible overview of Type 1 and Type 2 diabetes along with tips on mindful eating. Using dinnertime ruts as motivation, Cavuto features simple, make-ahead meals (e.g., trail mix wild rice salad, gingery chicken and vegetable soup) and freezer-ready dishes. Also featured are recipes for everything from vinaigrettes to frittatas to cobblers. The prep and cooking time is listed for each recipe, and most can be made in 30 minutes or less. VERDICT A must-have guide for anyone who struggles to find the time or energy to cook healthy weeknight meals or make-ahead lunches.
