Jinich, star of her own PBS cooking show, is nothing if not thorough in making Mexican cuisine accessible to northern chefs. Her cookbook brims with careful instructions and loads of advice on selecting ingredients to create the extraordinary spectrum of flavors offered by classic Mexican cooking. For those just starting out, Jinich leads her readers through a thicket of information about the dozens of fresh and dried chile peppers essential to Mexican dishes. Her Med-Mex salad illustrates just how closely Mediterranean and Mexican foods can be and how widespread the avocado has become throughout the 50 states. Her many sidebars guide the curious through such novelties as the differences between standard cinnamon and Mexico's lighter, milder variety and clarify how home cooking often differs from that in restaurants. Jinich hosts the PBS show Pati's Mexican Table and frequently appears on NBC's The Chew. In her second cookbook, she shares more of her favorite recipes for contemporary Mexican foods, including miso soup with nopales, shrimp enchiladas in rich tomato sauce, and floating islands with Mexican-style eggnog. These and other dishes are grouped into course-based chapters, including soups, salads, tacos and tostadas, guisados (stews) and other one-dish meals, desserts, and drinks. Jinich writes with busy families in mind. Many of her recipes can be made in advance or in less than 30 minutes and rely on easy-to-find ingredients. A highlight of this cookbook is its playful variations such as baked huevos rancheros casserole.
