Finally, a professional cook who understands the time constraints of working folks and realizes that few today can spend eight-plus hours at one time prepping for a dinner party. No surprise that Garten, aka the Barefoot Contessa, and author of nine cookbooks, gets the picture. In her latest cookbook, the 100 recipes know no ethnic boundaries; a Moroccan tagine happily shares pages with a leek-and-artichoke bread pudding and a skillet brownie. But what all her dishes have in common, besides the sharing of personal memories, is the ability to become even more flavorful over time, once tastes and spices meld. Every dish features not only the standard directions, list of ingredients, and good color photograph; each also includes notes about what can be fabricated in advance, whether it's batter sitting in a refrigerator or a three-course meal ready for warming. Garten offers smart solutions with over 75 recipes for make-in-advance dishes. Recipes are suited for both family weeknight fare meal planning and for special occasions. There are cocktails, from margaritas to martinis, and plenty of platters and soups for starters, including a wild mushroom and farro soup and walnut roqueforta "topped warm fig and arugula salad. For lunch, ham and leek empanadas can be filled, wrapped, and kept up to three days in the fridge and three months in the freezer before baking. Garten provides lots of casseroles, hearty grain and vegetable sides, and desserts. She also guides cooks through a complete make-ahead Thanksgiving feast.
