After explaining the fundamentals of ice cream and cookie making, food blogger and professionally trained chef Arias (-handletheheat.com) shows readers how to assemble and decorate charming ice cream sandwiches like peanut butter and jelly, mint julep, and chocolate caramel macchiato. Most of the ice creams are made with a cooked custard (French-style), but some, like strawberry cheesecake, are conveniently blended in a food processor. There is one dairy-free option (vegan banana chocolate chip). VERDICT Nostalgic ice cream sandwich lovers will enjoy Arias's creative takes.
