Food writer and cookbook author Fertig (Heartland: The Cookbook) uses eight base dough recipes (e.g., Easy, No-Knead, Vegan, Whole Wheat, Gluten-Free) to create multiethnic pastries like Cinnamon-Scented Swedish Tea Ring and Szechuan Pepper Cinnamon Rolls with Fresh Ginger Glaze. She begins this book with a guide to cinnamon roll history, anatomy, and ingredients, and concludes with metric conversions and equivalents. VERDICT While not a substitute for more comprehensive baking titles like Carole Walter's Great Coffee Cakes, Sticky Buns, Muffins & More, this fun niche-filler offers tempting cinnamon roll variations, several of which can be made in just two hours.
